The gorgeous modern Lightweight design includes a
textured handle for a secure grip, offering superior control and precision. To
balance the knives, Global uses a hollow handle, which is then filled with just
the right amount of sand to create the correct balance. Global does not use a
full tang and bolster to balance their knives. Handles are balanced
individually, to maximize ease of handling. Global's unique smooth contours and
seamless construction prevent food and dirt particles from collecting on the
knife, offering the ultimate in safety and hygiene.
Global knives are
made from the finest high carbon stainless steel available for producing
professional quality kitchen knives. Global is manufactured by Yoshikin, who
uses its own proprietary stainless steel which it calls CROMOVA 18
Stainless Steel. This steel is hard enough for Global knives to keep their edge
for a long time, but soft enough so that it is not too difficult to sharpen the
knives. The 18 percentage of chromium in the steel, contributes to Global's good
stain resistance. The molybdenum and vanadium give the knife good edge
retention.
There are four series of Global knives. They are G, GS, GF and
GSF.
All G, GS and GF knives are constructed from three pieces: the blade and two
halves of the handle. The G and GS knives are light weight and do not have a
forged collar. The two halves of the handle are welded together and then the
handle is welded to the blade for the G and GS knives. The GF knives have a
blade and collar that are forged as one piece and are Heavy Weight. For the GF
knives, the weld of the blade and collar to the handle is in the handle. The GSF
knives are a single piece of forged steel, without welds.
